It's the perfect choice ⁣to cast iron -⁤ lighter but still amazing quality.I used‌ to use Our Place and Calphalon for years, but I kept having to replace them because they'd lose their nonstick coating or get scratched. ‍ Size: 10.5 Inch Full disclosure, I bought my pan ‌directly off Strata's website before they came here to Amazon. I ⁤own the 12.5" pan and‍ absolutely love it. After it arrived I took⁢ the ⁣time to season it with⁤ 3-4 coats of oil. I have used it every day​ as and my cast iron barely gets used now.Weight is great, my wife appreciates she can⁣ handle it with one hand. Temperature distribution is very nice and even and the pan responds well⁣ heating and ⁢cooling off. NOTE:​ this will not retain ​heat like a cast iron pan, but thus far that has been ⁢a‌ useful thing ⁢and⁢ not‍ negative since the pan can cool ​down quicker than cast iron if I get it too ⁢hot. ⁣With ⁢a good⁣ initial seasoning and a little oil‍ when I cook I have found the⁤ non-stick‍ ability to be ‍considerably ‌better than cast iron. This is‌ NOT a pan with teflon or ceramic nonstick along‌ with all upsides and downsides associated with that (not as non-stick ⁢as teflon, but unlike teflon⁢ can ⁣be‌ re-seasoned if⁤ you⁣ end up abusing⁤ your pan) read more
